Cuisine

Dashi" is the basis of Japanese cuisine and determines the flavor of a dish.
The aromatic dashi enhances the seasonal ingredients and gives each dish a profound flavor. We are blessed with delicious flavors throughout the four seasons, and we use a wealth of local seasonal ingredients in abundance.

Kaga vegetables are traditional vegetables produced in Kanazawa City, Ishikawa Prefecture, and certified as "Kaga vegetables" by the Kanazawa Agricultural Products Brand Association. As of 2007, 15 items, described below, have been certified.

We offer kaiseki cuisine full of seasonal flavor, making use of the bounty of the sea and mountains of Kanazawa. Each accommodation building has its own kitchen, and freshly prepared food is delivered to your room. Please enjoy our cuisine, which is a feast for all five senses, carefully prepared by our skilled chefs.
