We offer kaiseki cuisine full of seasonal flavor, making use of the bounty of the sea and mountains of Kanazawa.
Each accommodation building has its own kitchen, and freshly prepared food is delivered to your room. Please enjoy our cuisine, which is a feast for all five senses, carefully prepared by our skilled chefs.

Tatsunokuchi Onsen is a land rich in nature, surrounded by the sea, mountains, rice paddies and farmland. Matsuzaki’s cuisine is made using fresh local ingredients, with the desire to serve food that can be enjoyed with all five senses.
We carefully select the most delicious Hokuriku ingredients for each season, aiming for gentle seasonings that will bring a smile to guests’ faces, and we prepare our food with all our heart, hoping to serve food that will warm both body and soul with just one bite.

Our chef, a Noto native who knows all about local seasonal ingredients such as vegetables, fish, and seasonings, prepares each dish with care.
For guests staying in the Houou Wing, we offer Shunsai Kaiseki, which is prepared with the utmost care and attention to detail, down to the ingredients and serving utensils.

You can choose either Noto beef or specially selected Wagyu beef. The finely marbled, melt-in-your-mouth, richly flavored Ishikawa brand beef or specially selected Wagyu beef is served with one of our recommended steaks.

Enjoy a sumptuous meal with sushi and Japanese beef fillet steak as part of the Shunsai Kaiseki.
Sushi items are made from the day’s recommended ingredients.

Each guest may choose one of the following as the main dish of Shunsai Kaiseki: grilled Nodoguro (bluefin tuna), or Japanese black beef steak.
Please contact us at the time of reservation or at least 3 days prior to your visit. If you do not contact us, we will prepare “Kuroge Wagyu Beef”.

Local sake
We offer local Ishikawa sake, blessed with underground water from the Tedori River, whose source is the high-quality water that flows from the sacred mountain Hakusan, amid the changing nature of the four seasons. Please take your time to enjoy the bounty of the Sea of Japan and local sake.
Breakfast
We offer a healthy breakfast to energize you to start your day. We serve freshly cooked rice made with Koshihikari rice from Tatsunokuchi, and dishes centered around carefully selected local ingredients that go well with the rice.
